Sam’s Maple & Soy Salmon with Mash
Ingredients
6 Salmon Fillets
1 cup of Mapple Syrup
3/4 of a cup of Soy Sauce
1 teaspoon of Garlic
1 teaspoon of ginger
6 shallots (spring onion)
5 potatoes
1 sweet potato
1 tablespoon of Butter
1/4 of a cup of milk
Rocket
Goats Cheese
Serves 6
Method
Get an oven dish big enough to fit 6 salmon fillets in. Pour the maple and soy into the dish and stir through a teaspoon of garlic and ginger.
Place the salmon into the dish and flip them over covering both sides. Cut the spring onions into fine slices and spread over the dish.
Ideally marinate over night. Cook the dish in the oven for 15 - 20 minutes turning the salmon over half way.
Chop the potato & sweet potato into fine pieces then place in a microwave bowl filling it with water so that it just covers the vegetables.
Microwave until vegetables are cooked. Drain then add a tablespoon of butter and 1/4 of a cup of milk. Then mash away.
Serve with Rocket and Goats cheese sprinkled on top with a drizzle of Olive Oil. Pour the juices from the dish over the mash and Salmon for extra flavour.
