Prawn Burgers

Ingredients

600g green prawn meat
1 Lemon rind
Lemon juice to taste
1 Fennel bulb, finely sliced
Dill
Pepper
1 tbsp tomato chutney 
1 tbsp dijon mustard
2 tbsp whole egg mayonnaise
Avocado
Extra mayonnaise 
Soft milk rolls (or something similar)
Cos lettuce

Method

To the prawn meat add dill, lemon rind, lemon juice from half the lemon and a dash of olive oil. Cook up in fry pan until prawns are cooked through. 

Cool prawns and roughly chop then add more dill, all condiments, fennel. Season with lemon juice, salt and pepper to taste. 

Cut rolls and mayonnaise on side, avocado the other then the prawn mix and a piece of cos. Serve with a green side salad.

Tastes great with a chardonnay or a crisp fresh white.
