Sally's Gnocchi
I first made this in lockdown for my fabulous family and it was very well received to those who usually love some ‘constructive criticism’ (said in a nice way.) Since then it became a bit of lockdown staple for my roommate and I to cook together with a glass of wine because it’s a nice thing to make together.
INGREDIENTS
Garlic Bread
Nice sourdough loaf (or whatever your heart desires)
Handfulish of finely chopped parsley
A LOT of butter (softened)
3 cloves of garlic
Baked Gnocchi Sauce
2 cloves of garlic
1 brown onion
2 tablespoons tomato paste
2 cans of tinned tomatoes
Chillies (whatever you can handle)
1.5 cups of parmesan (you need more for actual gnocchi)
Handful of Basil
Mozzarella
Gnocchi Itself
500 grams of ricotta
2 egg yolks
Salt and pepper
1 cup of parmesan
Nutmeg (optional) depending if I have it in the house
1.5 cups of flour
METHOD
Add finely chopped garlic and onion to a pan with olive oil once hot. Let it sit for 5 mins into somewhat cooked.
Add tomato paste and stir. Then add cans of tinned tomatoes to the pan with the chopped chilli’s. Add handful of basil and parmesan and let sit on low heat for 10-15 mins while you make the gnocchi.
Add ricotta and egg yolks into a bowl and mix gently. Then season with S+P and add parmesan. Slowly add flour and knead. The dough will be kind of sticky don’t worry about this – part of the vibe. (tip. Don’t overly knead it cause it becomes dense)
Split the dough into 8 similar sized pieces with a knife. Roll them into skinny sausages and cut into little ‘pillows’.
Boil some water. While this is boiling make your garlic bread by slicing the bread (not all the way through) and mix the remaining ingredients together then brush onto the bread slices. Then pop this into the oven for 15 mins.
Once water is boiled then add the gnocchi in batches into the water. Wait for roughly 3 minutes (it sometimes takes longer and can be semi panic inducing – don’t stress!) and they should start floating. Add them into your sauce and repeat until all the gnocchi is cooked.
Pour your sauce and gnocchi mixture into a dish and tear some mozzarella on top. Then pop it in the oven with your bread for 5-10 mins into the cheese is melted.
Add some basil on top and you’re done!
