Caroline’s Salmon Sandwich

INGREDIENTS

Rye bread
Smoked salmon
Cream cheese
Capers
Cucumber
Avocado
Spanish onion
Lemon
Butter lettuce

METHOD

Lay out sliced bread for the number of sandwiches required. Spread cream cheese on both sides of the bread (don’t be shy).

Lay slices of smoked salmon on bread, then sprinkle chopped onion and capers (don’t be too heavy- handed here, as we all know, sometimes less is more).

Squeeze lemon juice over the salmon and salt and pepper now, then cover with a layer of cucumber and then a layer of avocado, sliced length ways.

On the top of this tower, place large green leaves of butter lettuce. To seal the deal, place lid of bread down on top of filling.

This sandwich is like a convertible – really good with the roof off, a little more sturdy and dry with the roof on (and still particularly delicious), but all round, very versatile for any type of weather.
